This knife was inspired when I gave one of my knives to the baker they needed something longer and flatter for their use case, I also have a prep chef who normally uses a 9in Global Chef Knife so I wanted to let him try this one as well.

9-inch Chef knife - 141g
1.8mm spine thickness flat ground at 1.0 degrees with a micro-bevel to strengthen the edge.
Steel is a 440C steel with a hardness of around 60, hand sanded to 10,000 grit and then fine polished

The handle is made of a Stabilized Black Ash Burl with Resin Hybrid, hand sanded to 80 grit, and hand polished and coated with Tung oil to lock everything in and protect the wood. There is a 1/4in Aluminum Spacer as the bolster to create a transition from the knife to the handle. The handle is shaped in a Japanese Cowboy style. Overall this knife is very lightweight
