So this is the first knife of my first set. I wanted to make something with good tool steel so I settled on a CPM D2 Steel I ordered the steel online pre-heat treated and tempered. This steel came in very hard testing between 60 and 65 on the HRC scale based on use I feel that 62 would be accurate. This was the second knife that I made using the Hybrid Scales that I got after the last Damascus knife that I made.
I’m very pleased with the results of this knife
8-inch Gyuto - 218g
2.12mm spine thickness with a 0.9-1.0 degree Full flat grind.
CPM D2 Tool steel (High Carbon- slightly rust resistant but not considered stainless)
The handle is made of a Stabilized Black Ash Burl with Resin Hybrid, hand sanded to 800 grit, and hand polished and coated with tung oil to lock everything in and protect the wood. There are 0.5mm copper spacers placed on either side of the tang to add another metallic color to tie the piece together. And to hold the whole piece together is a copper and brass mosaic pin which just adds that touch of sophistication.
