This is my most premium knife yet. (And probably my most anxiety-inducing and most educational) I was approached by one of the new Executive Sous Chefs about wanting a new knife. I happened to have most of my portfolio on my person and we looked over everything. They wanted a High Carbon Damascus knife, with an 8-inch blade. They wanted a dark wooden handle. We talked price and he loved the idea. He gave me a deposit on the spot, and I got to work. With the price point we settled on I knew this had to be a premium product. So I sourced more steel from the forge that I used for the knife that he wanted a larger version of. Being that I had creative freedom and not much to work with I settled on a Rain Fall Damascus Pattern, I wanted to use really premium materials because this knife was a very high-end knife. And it did not disappoint. The ebony that I used for the sheath is the same ebony in the handle. The pattern of the JUMA complements the pattern in the steel. The silver leaf inlay on the saya pops like the accents on the knife handle. I initially thought about pinning the handle but i didn’t want to take away from the beauty of the design I ended up with.
8-inch Gyuto knife - 199g - 400g with Saya
2.1mm spine thickness with a slight convex grind with a polished micro-bevel.
Steel is 256 layer Damascus of 1095 and 15N20 with a hardness of 60HRC +/-1, Handed sanded to 2000grit then etched in Ferric chloride, and then etched/stained in Coffee to create the great contrast and then sanded to 5000 grit before the finish.
The handle is made of 6000-year-old Bog Oak, a Laguna Blue dragon scale JUMA, and Gabon Ebony, the same ebony that is used to make the Saya. and has white Micarta and stainless steel sandwiches as spacers. This is then hand sanded up to 1200grit, polished, and coated with Tung Oil and Polyurethane to seal and protect the handle.
